			<content:encoded><![CDATA[<p>Moussaka is a solid, delicious baked eggplant dish. There are many variations of moussaka, depending on the country of origin. This particular recipe here is a modern interpretation of a Greek moussaka recipe. It contains some very traditional Greek ingredients &#8211; minced lamb, aubergines, tomatoes, cinnamon and mint. A  traditional Greek moussaka recipe contains a béchamel sauce between  layers of meat and eggplant, but my version here replaces béchamel sauce  with mozzarella, saving time is not yet equipped with taste.</p>
<p><span id="more-998"></span></p>
<p>In a modern variant of the Greek version of moussaka cooking:</p>
<p>1) Place a large, deep skillet over medium heat. Boil a garlic clove and 1 small chopped onion in one tablespoon olive oil soft, about 4 minutes or until they are. Cooking 1 kg minced lamb and 5 minutes or until brown.</p>
<p>2) Add 700 ml tomato paste, 1 cup broth, 1/2 teaspoon cinnamon 4 cup chopped mint and 2 tbsp. chopped parsley and salt and pepper. Boil for 15-20 minutes or thickened and reduced. Set aside to cool and set.</p>

<p>4) In order to assemble moussaka, site-third of the eggplant slices at the base of a 22 cm dish. Top with 1/3 of cheese and half the meat sauce.</p>
<p>5) Continue layers, ending with a layer of cheese. Place in oven and bake 35 minutes or until cheese is golden brown.</p>
<p>The Turkish version of moussaka, not layered. Instead  it is made with fried eggplant, green peppers, tomatoes, onions and  chopped, and is usually served with spiced yoghurt and pilaf. The  Serbian and Bulgarian moussaka recipe uses potatoes instead of eggplant  and pork instead of lamb, and the top layer of yogurt with raw eggs and  flour mix. In  the Arab world, moussaka is a cooked salad made up primarily of  tomatoes and eggplant, similar to Italian caponata made, and it is  usually served cold as a mezze platter.</p>
<p>There is much to like moussaka. Besides being delicious, family friendly, freeze moussaka well without loss of flavor and texture when thawed and baked. You can double the recipes and eat now and freeze the second time later to enjoy without sacrificing taste or texture. Serve with a salad, moussaka is a complete meal for the family.</p>
