Vegan Cheesecake – Baked New York Style
Baking without eggs, butter (or margarine) and sugar can sometimes be a challenge. But tofu is an excellent alternative to whipped cream and put tapioca binds the ingredients like eggs would. Sugar can with a fruit syrup, or sometimes just meat, it would be sweet enough in most cases be replaced.
Before I went vegan, I made my usual cheesecake recipe very often, but I’ve used (of course) on the taste. But if the recipe I wrote again with healthier alternatives, vegan, my family and I can not believe how good it was similar in taste and texture could. The tofu is the same little dry, crumbly baked results than the traditional version, but still with the same creamy mouthfeel, sweetness and citrus flavor. 1 cup soy milk
2 tsp lemon juice / orange juice / apple cider vinegar

2 cups firm tofu, drained and patted (very) dry, finely chopped
1 tablespoon vanilla-infused grapeseed oil / walnut oil
6 tablespoons light agave syrup
2 teaspoons grated lemon peel
1 teaspoon vanilla
2 tablespoons tapioca flour
20 ml of corn starch
(1) Preheat oven to 180 ° C (360 ° F).
