Vegetarian Cajun red beans and rice recipe
Ingredients:
2 liters of water
1 large onion, chopped
6 cloves garlic, crushed
4-5 vegetable stock cubes (depending on taste and sensitivity to salt)
1 tablespoon tamari (optional)
1 tablespoon liquid smoke
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon ground coriander
½ c. Teaspoon cayenne pepper
2 cups TVP
1 cup brown rice
2 cups red beans, rinsed
Directions:
1. Set slow cooker on “low”. Add water to taste, onion, garlic, bouillon cubes, tamari, liquid smoke, chili powder, cumin, coriander and cayenne pepper. Stir until stock cubes are dissolved.
2. Add the TVP, brown rice and beans, stir and cook on “low” for 6 hours.
Enjoy this vegetarian recipe cajun red beans and rice at any time of year and with a nice salad. And if you need more choice, simply freeze the rest of the red beans and rice and heat in the microwave or on the stove when you are ready for another bowl. It can be frozen for 30 days so much fun!
